I have Ubuntu Mate 18.04 installed on a Dell Latitude XT2. I took the original hard drive out of the laptop that has Windows 7 Pro installed on it, and put it into an HDD USB case.
Is there a way to boot Windows from the external hard drive?
I have gone into the BIOS settings and it just wont seem to recognize the USB/external HDD.
The only way I can get Windows to boot now, is to physically replace the hard drive.
Any help would be appreciated.

Your question is hardware specific and barely related to Ubuntu (thus possibly off-topic). Some machines allow external boot (I'd expect yours to by selecting USB boot but some latitudes only boot if a single usb-storage device is installed so ensure you have only one installed) but your machine is only limited to whatever the BIOS/uefi will allow to boot. You may be able to add an item to grub on your Ubuntu/grub that chainloads the external drive - but this could be machine specific too (I've only used it for internal drives)
